Butter Up

Aficionados of butter sculptures, like myself, often wonder what happens to all that butter when its days as a glorious, gawk-worthy tribute to the noble Holstein cow are over. Do they just throw it out? Divvy it up? Spread it on the world’s largest piece of toast?

The butter sculpture at the New York State Fair will have a much more eco-friendly fate, thanks to the ingenuity of students and researchers at the State University of New York’s College of Environmental Science and Forestry. SUNY scientists will melt the butter down to extract the fat (which makes up 80 percent of butter), then purify and chemically transform the fat into biodiesel fuel.
